Shop HakkaisanHakkaisan Brewery was founded in 1922 by Koichi Nagumo in Minamiuonuma, looking up at Mount Hakkai — one of Echigo’s three sacred peaks. Winters here bury the basin in metres of snow; the melt becomes the brewing water.
The house style is the Niigata ideal of tanrei karakuchi: smooth, dry, and modest on the nose, so food stays in front. Tokubetsu junmai and ginjo are the weeknight bottles; snow-aged releases rest in the cold for years before they see a label.
Kongoshin (金剛心) is the other face of the brewery — a junmai daiginjo polished far past the everyday Hakkaisan, still carrying that Uonuma restraint rather than tropical perfume. On the shelf now: snow-aged three-year junmai daiginjo, Kongoshin for summer, the 45, a sparkling nigori, Uonuma junmai, both hatsushibori labels, and the 1.8 L daiginjo.
