Shop Kubota

Asahi-Shuzo (朝日酒造) has brewed in Nagaoka, Niigata, since 1830, using soft groundwater and rice from the surrounding paddies. In 1985 they launched Kubota, taking a name from the brewery’s earlier house identity.

Do not confuse this Asahi with Dassai’s Asahi Shuzo (旭酒造) in Yamaguchi. Same reading, different characters, different prefecture, different glass. Kubota is Niigata: dry, composed, built for food.

The core range is named for long life — 百寿, 千寿, 萬寿, 翠寿, 紅寿 — each a different polish and temperature story. Snow Peak (雪峰) is a yamahai junmai daiginjo in 500 ml: the same clean house, with a wilder starter. On the shelf now: Manju, Manju on house yeast, Manju muroka nama genshu, Suiju namazake, Senju ginjo nama genshu in 1.8 L, and Seppo.
