Shop Ohmine

Ohmine Shuzou sits in Mine City, Yamaguchi, under the Akiyoshidai plateau. The brewery had slept for more than fifty years when it was revived in 2010, taking its name from the place — 大嶺, read Ohmine.

The house brews only junmai genshu: rice and koji, no added brewer’s alcohol, and no water stirred in after fermentation. Brewing water is Benten spring water from Akiyoshidai; the everyday rice is Yamada Nishiki grown with contracted local farmers. The glass is meant to carry sweetness, umami, and acidity together, usually around 14–14.5% alcohol even though it is undiluted.

The labels speak in grain counts rather than the usual ginjo grade names. 2粒 (2 Grain) covers rice polished to between 30% and 49% remaining — the standard Yamada Nishiki 2粒 is 35%; 3粒 (3 Grain) is 50% remaining or more, with the year-round Yamada Nishiki 3粒 at 50%. On the shelf now: 2 Grain in Yamada Nishiki, Aiyama, and Dewa Sansan; 3 Grain in those three rices plus a Dewa Sansan muroka nama and an Omachi hiyaoroshi.
